Bourbon Cream Cake

Ingredients

Cream Cake

3/4 cup flour (all purpose)
1 teaspoon baking powder
1/4 teaspoon kosher salt
1/4 cup sugar
3 tablespoons unsalted butter (softened)
3 large eggs (yolks & whites separated)
1/4 cup buttermilk
1/2 tablespoon vanilla extract
2 tablespoon brown sugar
1/3 cup bourbon cream
3/4 cup sweetened condensed milk


Bourbon Cream Icing

1 cup heavy cream
2 tablespoons Bourbon Cream
2 tablespoons powdered sugar
Cinnamon Sugar (1 tsp ground cinnamon and 1/4 cup powdered sugar - combined) for dusting

Instructions

  1. Preheat oven to 350°.
  2. Prepare your baking dish by lining the bottom with parchment paper and greasing liberally.
  3. In a bowl sift together the flour, baking powder and salt. Set aside.
  4. In your stand mixer (or by hand) cream together the softened butter and sugar. Once combined add in the egg yolks, buttermilk, and vanilla. Mix until well combined. To your mixer add the flour mixture slowly until fully incorporated.
  5. Using an electric mixer, fitted with the whisk attachment, beat your egg whites on medium speed until frothy (approximately 1 minute). Slowly add in the brown sugar. Continue beating until the whites are glossy, stiff peaks form (approximately 3 minutes).
  6. Start by folding in a small amount of your egg whites into the batter mixture to loosen it. Gently fold in the remaining egg whites taking care not to deflate them.
  7. Pour the batter into the prepared pan. Spread the batter into an even layer. Bake 20-25 minutes or until the top has become golden and the center is set. Allow the cake to cool 10 minutes.
  8. While the cake is cooling, prepare the cream glaze. In a mixing bowl combine the bourbon cream and the sweetened condensed milk.
  9. Do not remove cake from baking dish. Use a skewer or straw to evenly poke holes throughout the surface of the cakes. Pour the cream mixture evenly over the cake. Cover and chill cake for a minimum of 2 hours.
  10. Before serving, whip together the bourbon cream, heavy cream and powdered sugar together with an electric mixer. Mix at medium speed until medium soft peaks form (approximately 2 minutes). Dollop the whipped cream over the cake and gently spread to make an even layer. Can be served in or out of the baking dish. Sprinkle with cinnamon sugar.
