The Aging Warehouse Department has the responsibility of handling thousands of barrels each year, ranging from 3 to 23 years old. Since whiskey gets much of its character from the barrel it's stored in, quality is built into every step of the process.
We begin by inspecting each barrel before it's filled to make sure it adheres to our unique barrel specifications and to minimize potential leaks. While the barrels are aging, we constantly check for leaks and we randomly take samples to ensure consistent and proper aging. When it comes time to select barrels to be dumped, we sample them first to make sure the bourbon matches the taste profile from the very first batch of that specific brand.
If you asked us what makes for a great aging floor in one of our warehouses, the truth is we can only speculate. But airflow, temperature fluctuations and humidity all play a role and we have ben able to develop strong guidelines through many years of experience. At our Distillery we believe it's important to embrace new technology so that we're always improving, while also honoring the history and tradition that this place is built on.
